
Perry has been wanting to stuff some
poblano peppers and tonight she had a chance. Chile
relleno (meaning merely filled
chile pepper) is a staple Mexican dish that does not need to be deep fried, or even fried at all. It traditionally was a baked
poblano pepper. The farmer's market had good fresh crisp
poblanos which stayed fresh in my refrigerator for a few days. She loaded them with a mixture of corn, black beans and red pepper and we baked them for about half an hour. I was pleased that she did the stuffing yet somehow I was left with the cleaning...we topped them off with
Chalula (bottled hot sauce) and ate the peppers and the extra filling with some "
Chalula stir fry" comprised of yellow squash, zucchini,
portabello mushrooms,
shitake mushrooms, onions, sweet red pepper and celery with cumin, oregano, black pepper and sea salt and a dash of
Chalula (well, we adults had more than a dash...) The kids ended up a little spiced out by the end and there were some cries for water but they consumed an awful lot before those desperate requests, so I think it really was relatively mild...
