This easy crunchy chopped salad is appealing even to picky eaters...all right, I know some of you do not believe I have picky eaters but I do. And, actually, I am rather picky myself, but that is well known to say the least!

A whole cup of green beans has only 43 calories with many trace minerals, B vitamins, especially riboflavin (a migraine headache reducer), and omega-3 fatty acids. With magnesium and potassium together, they have the ability to lower blood pressure. The fiber, vitamin C, folate and beta-carotene work together in keeping cells healthy for cancer prevention...so, basically good all around but they tend to get a bad rap when compared to leafy greens...hmmm. They do need better PR, but don't we all?
