

This chowder is hardy, cozy, warming and delicious, but we really actually call it
un-chowder. Minus the cream, the milk, the seafood, the most unwelcome bacon or meat for flavoring, this chowder is pure veg. To make it, I diced some onions and peppers and slowly sauteed them for about twenty minutes. Separately, I boiled water with corn cut from the cob, three corn cobs for flavor, and diced potatoes. When the potatoes were soft enough, I added the peppers and onions, 1/2 cup of unsweetened soy milk, 1/4 cup of unsweetened almond milk, and some secret spices. OK, a dash of British Virgin Islands Caribbean Seasoning with Sea Salt, Herbs and Spices is what I used and it was delicious, but if using that brand just use a little because it is salty.
