Gluten free brown rice tortillas and some Ezekiel sprouted grain ones, full of fiber, were the base for the saucy delicious vegetarian pizzas we had a a quick do-it-yourself dinner. Each child begged me to take a picture of their pizza (before cooking it) for my blog so I am saddling my readers with views of all four. Luke Zimmerman is so proud that his pizza looks like a salad while Perry and Lizzie aim for artistic. Susannah kept hers simple with tomato chunks, basil, olive oil and balsamic vinegar. There was a Mediterranean pizza on our recent vacation so the girls like to replicate those flavors with red onions, peppers and kalamata olives.
For a full serving of vegetables, go for it Luke Z. style but for everyone else, leave the toppings on the table to munch on as a salad or to dip in the leftover sauce...
